The Making of Banana Bread

In my house, this is a first.

Yep, never made banana bread.

Those that really know me know why I have never made banana bread.

I hate bananas!

I mean I really.hate.bananas.

I can’t even stand the smell of bananas.

Oh! But wait…it even gets weirder than that.

I like some banana nut bread.

Now, when I say “like it”, it really translates into it has to taste nothing like bananas.

Yep, I’m weird!

So, now that you are up to speed on my banana weirdness, here is the rest of the story…

I was tired of throwing away over ripe bananas knowing I could just make banana bread.

(It’s my frugal side.  It really gets in the way sometimes.)

I decided I was going to brave it out and look up a recipe.

I went straight for Pinterest and found this easy recipe by Rachel at Eazy Peazy Mealz.

Gotta love Pinterest!

Of course, it took at least 3 days for me to actually get around to making the bread.

Thankfully, I procrastinated until Saturday when Brian was home.

‘Cause turned out…I wasn’t as brave as I thought I was.

I got one banana peeled and in the bowl..


and started hollering for Brian!

I’m a wimp.  I admit it.  Couldn’t handle the smell.

I had to call in reinforcements.

However, it came out looking beautiful.

And Brian and the kids loved it.


Me, I missed the nuts. (Takes away some of the banana taste, evidently.)

Sarah is allergic to tree nuts, so no nuts will be added in the future.

However, chocolate chips will be tried.

Everything tastes better with chocolate, right?!

(And, of course, Brian will be assisting in the banana bread making process from this point on.)

On the Menu

I have gotten away creating a menu and planning ahead for the month, which has not been a good thing.  Not planning ahead tends to end up costing more in the long run, both in grocery bills and eating out.

February is a lean month for us because my hubby does not have any teaching income from January.  It is even more important to watch the grocery and dining budget this month which mean I really need to get my act together and get organized with our meals!  I’m going to be using as much of what I have on hand as possible and also trying out some new recipes that I found through Pinterest.

So, here is what is on the menu this week…

Monday  – Loaded baked potatoes, bbq meatballs (leftover from super bowl), and roasted broccoli.

Tuesday – Brown Sugar Garlic potatoes (which I cooked ahead on Saturday), green bean casserole, carrots.


Wednesday – Spaghetti, Bread, Salad

Thursday – Teriyaki chicken & rice

Friday – Homemade Pizza (picked up 3 Boboli crusts at the bread store today for $1.99! They were buy 1, get 2 free!)

Saturday – Porkchops, Roasted Potatoes, Salad, Bread

Sunday – Leftovers for lunch; Potato Soup & Bread for supper

My New Favorite Cookie Recipe

Matt has been begging for me to make cookies for a week.  I finally broke down on Sunday and got to bakin’.

I’ve been trying several different chocolate chip recipes lately and just haven’t found the ONE.

None of them have been bad, but I just haven’t found one that I really loved…until now!

And, of course, I found the recipe on Pinterest!  Gotta love Pinterest!

The mix ended up making 3 dozen nice sized cookies and the kids absolutely loved them!

My plan next is to make up an extra batch of dough and freeze the roll for future baking.
