I have gotten away creating a menu and planning ahead for the month, which has not been a good thing. Not planning ahead tends to end up costing more in the long run, both in grocery bills and eating out.
February is a lean month for us because my hubby does not have any teaching income from January. It is even more important to watch the grocery and dining budget this month which mean I really need to get my act together and get organized with our meals! I’m going to be using as much of what I have on hand as possible and also trying out some new recipes that I found through Pinterest.
So, here is what is on the menu this week…
Monday – Loaded baked potatoes, bbq meatballs (leftover from super bowl), and roasted broccoli.
Tuesday – Brown Sugar Garlic potatoes (which I cooked ahead on Saturday), green bean casserole, carrots.
Wednesday – Spaghetti, Bread, Salad
Thursday – Teriyaki chicken & rice
Friday – Homemade Pizza (picked up 3 Boboli crusts at the bread store today for $1.99! They were buy 1, get 2 free!)
Saturday – Porkchops, Roasted Potatoes, Salad, Bread
Sunday – Leftovers for lunch; Potato Soup & Bread for supper
