What’s Going On with the Fam

Life has been a little bit crazy over the last few weeks, so I thought I best catch you up a bit.  I’m just not exactly sure where to start!

Let’s see….

Matt finally admitted he has made up his mind about college, well, at least as close of a commitment as we can get out him anyway.  In his words, he will be going to Louisiana Tech “unless something happens with baseball.”  Since Brian and I both graduated from Tech, he is considered a Legacy student and qualifies for in-state tuition, plus he did receive an academic scholarship.  It doesn’t cover everything, but it definitely helps.  He would still like to play baseball in college, but it is not going to be the deciding factor in where he goes.  We feel like he is really handling all this with a lot of maturity and are very proud of him.

On the homeschool front, Daniel is starting with Creative Conversations.  It’s not ideal in the timing, but he has friends in the program and we think he’s ready to move on to something more intense.  He will go to class/tutoring on Mondays and then works on his studies the rest of the week.  He went to his first session yesterday and seemed to enjoy it.  There are only about 4 or 5 other kids in his class and they seem to have a fun time learning.  Hopefully, things will run smoothly as we finish out this first year of homeschooling!

Brian leaves for England on Friday for his annual PhD trip.  He will be gone until the 13th and will, hopefully, make a good amount of progress in his writing. If all goes as planned, his trip over next spring will be to successfully defend his dissertation! 🙂

And the last bit of news is that I am headed back to work!  It’s only temporary and only part-time.  I’m actually going back to work doing what I was doing for 4 1/2 years before leaving last January.  The work load increased with new projects and responsibilities after I left and it sounds like they have been barely keeping their heads above water.  Thankfully, they received approval to hire someone temporarily to finish out the current budget year.  After spending quite a bit of time in prayer, it really felt like this was the direction God was leading to help us with upcoming expenses this spring.  It’s going to take some adjustments, but I’m really excited about getting to work with so many of my friends again.

I guess that gets you caught up with the major things going on right now.  My mind has been swirling with all the things that I’m realizing are coming up that I need to work through.  New homeschool plan, Brian’s trip, baseball trip to Florida, graduation, senior pics, the boys’ birthdays….AHHHH!  I need to channel my inner Dori – “Just keep swimming, swimming, swimming!”

On the Menu

I know I haven’t posted anything since last week’s menu, but last week turned out to be kinda crazy and I never did get back around to blog world.  Even though this week may turn out crazy in it’s own right, I am hoping to do much better with posting.  I have some things I really want to share with you (like Sarah’s “wedding”, Matt’s college search update, and some homeschool news).  Now if I can just pull things all together!

Brian will be leaving for his annual PhD trip to England this Friday, Matt has his first baseball scrimmage of the season on Saturday, we are “puppy sitting” two puppies for a few days, and I have just realized how much I need to organize between now and Matt’s graduation in June!  So, I’m thinking I better keep meals easy peasy for a little while!

Monday – Spaghetti, bread

Tuesday – Leftover parmesan chicken, green beans, corn

Wednesday – Bourbon Chicken (crockpot) & rice

Thursday – Bacon, eggs, biscuits

Friday – Papa Murphy’s pizza

Saturday – Popcorn shrimp, homemade fries

Sunday – Grilled cheese, ramen noodles (unless I come up with something else between now and then!)

On The Menu

Ok, so I’m a little behind this week.  What’s new?!

I had hoped to have this posted yesterday, but both Daniel and Sarah have been sick (with two different things, lucky us!) and I decided that I could not live with the state of our bedroom any longer (feel blessed I didn’t post pictures of that!) and when I actually found some moments of quiet in the house with all three kids home I decided to read a book (or two…).

So, finally, here’s what’s on the menu this week…

Monday – homemade waffles, homemade hashbrowns (my first try EVER! Sad, I know!), eggs

Tuesday – chicken tenders, corn, lima beans, homemade coleslaw

Wednesday – chicken with pasta, green beans, bread

Thursday – Taco Stew

Friday – Pizza Bagels, Salad

Saturday – Parmesan Chicken Bake, roasted potatoes, carrots

Sunday –  Leftovers

Cousin Pics

I completely forgot about these pictures we took over Christmas with our nephews!


It was a Sunday and everyone was dressed up for church, so it made a perfect chance for a photo shoot (and everyone managed not to get lunch on their clothes).

On the Menu

I have gotten away creating a menu and planning ahead for the month, which has not been a good thing.  Not planning ahead tends to end up costing more in the long run, both in grocery bills and eating out.

February is a lean month for us because my hubby does not have any teaching income from January.  It is even more important to watch the grocery and dining budget this month which mean I really need to get my act together and get organized with our meals!  I’m going to be using as much of what I have on hand as possible and also trying out some new recipes that I found through Pinterest.

So, here is what is on the menu this week…

Monday  – Loaded baked potatoes, bbq meatballs (leftover from super bowl), and roasted broccoli.

Tuesday – Brown Sugar Garlic potatoes (which I cooked ahead on Saturday), green bean casserole, carrots.


Wednesday – Spaghetti, Bread, Salad

Thursday – Teriyaki chicken & rice

Friday – Homemade Pizza (picked up 3 Boboli crusts at the bread store today for $1.99! They were buy 1, get 2 free!)

Saturday – Porkchops, Roasted Potatoes, Salad, Bread

Sunday – Leftovers for lunch; Potato Soup & Bread for supper
